If you don’t like prunes, dates would work great. Or just cherries on their own!
INGREDIENTS
•1 tbsp butter
•1/2 sliced onion
•2 garlic cloves chopped
• Handful of cherries sliced in half pits removed
•7 prunes chopped
•1/4 cup balsamic vinegar
•2 tsp honey
INSTRUCTIONS
•Preheat oven to 425F. Add skillet over high heat. Once hot, add butter and pork chops. Sear 4 min per side. Remove.
•Mix balsamic and honey. Add onion and garlic to pan. Add more butter if needed, about 1/2 tbsp. Once browned, add balsamic mixtures, prunes and cherries. Add pork chops. Place skillet in oven.
•Cook in oven until chops reach 145F, about 5 mins. Remove. Taste sauce to make sure reduced and tastes yummy. If not, just simmer over stove top a few more min.
•Plate chops and pour sauce on top. Top off with optional chopped basil!
